Fig & Almond Cake…
Here is a recipe for a very easy fig & almond cake, however, you could easily adapt this recipe to instead use plum, nectarine, banana or even, fine layers of apple or pear… the variations are endless…

Ingredients
1 Cup Almond Meal
1/4 Cup Sugar, plus extra
1/4 Cup All Purpose Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Ground Cinnamon
Pinch of Salt
3 Eggs at Room Temperature, lightly Beaten
4 Tablespoons Butter, melted & cooled
1/2 Teaspoon Vanilla extract
8 Fresh Figs or fruit of choice
Instructions
Preheat oven to 375 degrees & line a slice pan with paper
In a large bowl, whisk together the eggs, butter & vanilla extract
Add to the wet mixture, almond meal, sugar, flour, baking powder, cinnamon & salt … combine until smooth
Pour the batter into the prepared pan
Remove the stem from each fig, then cut in half ( Prepare chosen fruit to suit)
Arrange the figs cut side up over the batter, pushing the figs gently into the batter
Sprinkle the extra sugar over the figs, then bake for about 30 mins or until the cake is set in the center
If you can wait… cool to room temperature before serving
